Easy Butter Chicken Curry
Seriously guys, this is the easiest butter chicken recipe I've ever come across. Not even joking.
It is however more of a yoghurt chicken curry than a butter chicken curry, but hey, it stills tastes phenomenal, is super simple to make and you can very easily scale the recipe up and down. It also pairs very nicely with Cauliflower Rice (recipe HERE) as a base. So when it's all said and done, yoghurt is basically butter anyway right?
Wrong. But just go with it.
1 kg Chicken Breast Fillets
2 Tbsp Olive Oil
1 Litre Double Cream Yoghurt
2 Small Tins Tomato Paste
2 tsp Crushed Garlic
0.5 tsp Turmeric
1 tsp Cayenne Pepper
0.5 tsp Ground Coriander
Salt & Pepper (To Taste)
Fresh Coriander Leaves (Garnish)
Chop up your chicken breast fillets into cubes and place them into a pot with the olive oil.
Seal the chicken cubes for roughly 8 - 10 minutes on low - medium heat.
Add all of the other ingredients into the pot except for the yoghurt. Stir everything through well and simmer on a low heat for another 10 minutes.
Add the tub of yoghurt to the pot, stir through well and cook on a medium heat for 5 minutes.
Garnish and serve. Simple right?
