SIMPLE CAULIFLOWER MASH
Cauliflower is a Banters miracle food. Highly versatile, low in carbs and you can use it as a substitute for just about any of the old high-carb staples. Pizza bases, Cauli Rice and of course, this simple and wonderful dish, Cauliflower Mash!
For me, I love some good old Bangers and Mash and it was truly heartbreaking to think I'd have to give up mashed potatoes all together when I started this journey. However, very quickly I learned that there was an excellent and healthy alternative. I had heard about it before I'd started banting but had never had the need to try it. In the hype and confusion of the first two weeks of my lifestyle I completely forgot it was an option, but one day it showed up in my Facebook news feed like my tummy's Fairy Godmother and granted it's delicious wish upon me.
I hope you find this side dish staple just as enjoyable as I do!
1 Head of Cauliflower
70g Butter (melted)
1 - 2 Tablespoons Mascarpone Cheese
Steam your head of cauliflower until soft and then place it in a blender or a deep bowl/pan if you're using a stick blender.
Begin to blitz blend the now soft cauliflower.
While blitzing add the yolks of the two eggs to the cauliflower as well as the 70g of melted butter.
This is the point at which my friend Kat likes to add the mascarpone cheese as it adds a definite creaminess to the end product.
Keep blitzing until you have a smooth texture and VOILA! You have made your first Cauliflower Mash!
Now is when I would shake in some dried chill flakes because, if you've been following the blog for a while, you'll know I have an insatiable love of all things spicy..but this is purely an optional extra if you want to give the mash a little bit of zing!
