Egg-Fried Cauliflower Rice
Yet another fantastic Cauliflower substitute staple, and so incredibly simple!
This is one of my absolute favourites and the first time I experimented with making it I ended up forgetting to make the rest of the meal and just ate an entire bowl of this on its own. It wasn't one of my proudest moments but it got me through the episode of Bates Motel I was watching at the time with a full tummy and a happy heart, so thats certainly a plus.
1 Large Head of Cauliflower
Salt & Pepper
If you have a blender then pop in your chopped up head of cauliflower and blitz it until its at roughly a rice consistency.
If you don't have a blender then you can join me in grating the cauliflower by hand like a peasant which gives it a slightly chunkier texture which I rather enjoy. I generally just chop the head of cauliflower in half before grating it.
Get a large pan on the stove and drizzle some olive oil in while it heats up. While this is happening, crack both eggs into a bowl and stir it up with a fork as if you're getting ready to make an omelette.
Pour the eggs into the pan before it gets too hot and make sure it covers most of the surface area of the pan.
Pop the cauliflower rice into the pan and mix it all in with the egg as it begins to cook through.
Add salt and pepper to taste.
Fry the rice for about 6 - 8 minutes or until it reaches your preferred consistency.
Serve immediately with the topping of your choice!
