Cheesy Garlic & Rosemary Pork Chops
I really do love pork. Pork Chops, Ham, Bacon. Ham wrapped in Bacon. You know, the usual.
But it's recipes like this one that really take pork to the next level. I've experimented a bit with a few combos of ingredients and have really settled with a simpler is better solution on this one.
Cheese? Love it. Pork? Adore it. Cheesy Pork? If it was legal to marry food then I'd be ring shopping as we speak.
4 Pork chops
6 Tbsp Fresh Lemon Juice
1 Tbsp Minced Garlic
2 - 3 Sprigs of Rosemary
Salt & Pepper To Taste
2 Tbsp Olive Oil
1/2 Cup Grated Cheese
Take out a baking tray or shallow casserole dish and add the lemon juice, rosemary and garlic.
Gently place the pork chops into the dish and turn several times to coat the meat well. Leave the chops in the marinade and wrap the dish with plastic, then place it in the fridge for 25 - 30 minutes.
Rub salt and pepper evenly into both sides of the pork once that time has passed.
Heat up some olive oil in a large pan and add the pork chops to the pan. Cook for 2 - 3 minutes to brown the one side. Turn the chops and reduce the heat to a medium-low setting. Cover the pan with the lid and allow to cook for 8 minutes.
Once thats been done make sure the pork is cooked through and then allow to rest for 3 - 5 minutes.
Take the leftover marinade/dressing in the dish and add it to the liquid in the pan stirring it until it's completely blended.
Place the pork back in the pan amidst the sauce and sprinkle the grated cheese evenly over the chops. Cover the pan again and cook briefly until the cheese has melted.
