Ham & Egg Cups with Feta
This is such a great meal to make for breakfast, and it doesn't take very long either.
It's one of those meals you make that's just so simple to do, but makes you feel like a culinary genius.
"No, mom..I put the egg into the ham. No, the ham is a cup shape mom. Yes, thank you, I am your most creative child."
What I like most about this as a meal is that you can wake up, get this in the oven in under 5 minutes, shower while it's baking and then have a tasty treat waiting for you when you get out.
2 - 4 Slices of Ham
Salt & Pepper to Taste
Grated Cheddar (I use mature cheddar and so should you.)
Preheat the oven to 180C.
Spray your muffin pan with Spray & Cook, or just grease it with a little butter so that the ham doesn't stick to the inside while cooking.
Push the slice of ham into the muffin hole so that it forms a cup shape. The reason I've said 2 - 4 slices of ham is because sometimes you get big muffin pans, or just really small cuts of ham. If this is the case, overlap two slices of ham and push into the muffin hole to form the cup shape.
Crumble a little feta into the bottom of the ham cup.
Crack your egg straight into the ham cup and season with a little salt, pepper and italian herbs.
Place the muffin pan into the oven and leave it to bake for 10-15 minutes, depending on how hard or soft you like your eggs.
Once it's done, take out your muffin pan and slide a knife around the edges to pop out your delicious little egg & ham cups. Sprinkle some cheddar cheese on top for that awesome "two cheese" combo effect.
Then to finish, make yourself a cup of tea and congratulate yourself for being your parents favourite.
